WINE OF THE WEEK: Hollick Old Vines Coonawarra Cabernet Sauvignon 2019, Australia

Archetypal, expressive Coonawarra Cabernet Sauvignon from Hollick’s own vineyards in the region’s distinctive terra rossa soils. The age of the vines isn’t given, but this wine is made from the oldest vineyards, which were originally planted in the 1970s and '80s by Ian and Wendy Hollick.


Classic aromas of cassis and mint – opulent yet crisply defined – mix with savoury graphite, black olive and smoky, chocolaty oak flavours, all underpinned by ripe, velvet-smooth tannins, concentration and an energising lift of green pepper to give clarity and definition to the finish.


It’s a wine that loves lamb, almost any cut and any dish, but especially roast with garlic, rosemary and anchovies and Provençal baked lamb shanks. It’s good with rare steak, too, and with caramelised roast root vegetables or firm cheeses such as extra aged Gouda, Comté, Parmesan and Manchego. It can be enjoyed now or at anytime, if stored in cellar conditions, until 2030. 14.9%. Empty bottle weight: 542g.
