Paramos de Nicasia wine

I've held off making a Màquina y Tabla white a Wine of the Week for no better reason than that one of this producer's reds was a Wine of the Week in 2016. It's not a good reason when the wines are as brilliant and as innovative as they are, so I'm kicking off 2018 with a hearty shout for the 2016 Páramos de Nicasia, a wine with immediate appeal but lots of layers (and the last vintage to bear the humble Vino de España designation before promotion to DO Toro). It's a blend of Verdejo and Malvasia, a small proportion of it matured in barrels under flor (the same yeast that grows in a protective film on the surface of bone-dry Fino sherry). Here it adds a delicious freshness to the vivid citrus and apricot fruit, the spicy notes and the gently nutty, chewy depth. You can drink it on its own, but it has the structure and intensity to stand up to main courses based on fish, chicken, cheese or vegetables and grains.
